Roseda is a small family farm, and while our black angus beef may
be local to Maryland, it is available for
you to purchase at Miller Farms Market. Roseda beef is a gourmet product that you
can enjoy in the convenience of your own home. We guarantee that our steaks and
burgers are some of the best you will ever eat because at
Roseda we believe in a quality product.
Our beef is all natural and dry aged to guarantee taste and tenderness. We only
use local cattle. Our beef is
USDA inspected for quality. We believe that Roseda is premium angus beef to be
shared with family and
friends. Try our famous dry aged beef

How does it make beef taste
better?
These days, it's all about speed.
Mass-produced beef is rushed to
grocery stores within 2-4 days of harvest. In all that hurry,
the true,
rich taste is left behind. At Roseda, we hang our beef in a
refrigerated
cooler immediately after harvest for a period of 14 to 21
days.
We keep the humidity low, so moisture from the beef gradually
evaporates, leaving a greater concentration of rich, beefy
flavor.
Natural enzymes also break down the more fibrous tissues,
tenderizing the meat. The dry aging process takes longer and
costs more. That's why most grocery stores – and even many
restaurants – offer little, if any, dry-aged beef. But those
who
appreciate tender, rich-tasting beef know that dry aging is
worth
the wait.
What makes marbling so
important?
Marbling refers to the small white flecks of
fat that appear
throughout a cut of beef. Generally speaking, the more marbled
the beef, the better the taste – and the higher it will be rated
by
the U.S. Department of Agriculture. Prime beef has the most
marbling, Choice has less, and Select the least.
It's no coincidence that many of the most desirable cuts – the
rib eye
and the T-Bone, for example – are the most marbled. A
well-marbled
cut also tends to stay juicier even if it's cooked longer.
At Roseda, marbling actually begins before birth. We carefully
select
our cattle, matching Black Angus bulls and heifers whose genes
show
that they're most likely to breed the best beef cattle.
And of course, marbling is just one secret to better beef.
Natural
feeding, a low-stress grazing environment, and dry-aging all
combine
to make Roseda Beef some of the best you'll ever eat.

juicy
steak taste that floods your mouth from the very first
bite.
This is no ordinary burger.
Because
Roseda Steak Burgers aren't ordinary ground beef.
They're
delicious ground steak from the same dry-aged beef
as
our gourmet steaks and roasts.
It’s
simple. We control every step to ensure the highest quality.
Step
1 is Breeding. All our cattle are bred to Roseda bulls, or
to
bulls carefully selected from other farms, with the genetic
traits that
produce outstanding beef.
Step
2 is Natural Feeding. Calves are weaned at about seven
months, and graze in lush green pastures for most of their
lives. Then
they are placed on a wholesome diet of chopped corn plants and
kernels, corn, hay, alfalfa, soybean meal, vitamins, minerals
and fresh
water. We use no hormones or chemical additives, and no
antibiotics
unless medically necessary.
Step
3 is Dry Aging. We work with two local packers who dry age
all of our beef for 14 to 21 days for outstanding flavor.
In fact, each animal has its own "biography." We can
tell you its
pedigree. We can tell you if it was raised at Roseda, or to
Roseda
standards at one of our affliated farms. We can tell you how
it was fed
and when it was harvested. We can trace specific cuts of meat
back to
specific animals.
More than 50% of Roseda cattle qualify as Kosher. That's about
twice
the rate of ordinary herds – and one more result of Roseda's
stringent
quality control every step of the way.
You
should have a stand alone freezer because you
will
be receiving all of this beef at one time.
