Buy a pint of Trickling Springs Creamery heavy cream at our farm. Dump it into a mixing bowl and whip quickly until it reaches the thickness that you like. It should make little peaks when you dip into it with a spoon. If you whip it too long then you will make butter. Enjoy!

Grease a 9" springform pan. Set aside.
For the crust mix these ingredients and press into bottom of 9" pan and 1/2 way up the sides:
1 1/4 cup grahm cracker crumbs
2 tbs sugar
1/4 cup melted butter
set prepared crust aside. Do not pre - bake
for the filling, mix these ingredients in mixing bowl until well blended:
2 (8 oz) packages cream cheese, softened
4 egg yolks
1 tsp vanilla
1 cup sugar
Then add 1 cup whipping cream (heavy cream)

Have you tried the fresh Shiitake Mushrooms? After the March cooking class (where we made Fresh, Hot Shiitake Mushroom Spread .... on freshly baked English Muffin Bread) and we demonstrated how to cook a bag of dried beans) .... the following recipe has been shared by K & T Specialties, our Shiitake Mushroom growers:
1 (lb) bag dried 15 or 17 bean mix, soaked overnight
1 cup chopped Fresh Shiitake Mushrooms from Miller Farms Market (1/2 lb bag)
1 cup chopped onions
1 cup chopped celery
1 cup grated carrot

Favorite Family Recipe
From Miller Farms Market you will need:
1 lb Papa Weaver Sausage
4 cups Trickling Springs Creamery Milk
1 1/2 cups grits
10 tablespoons butter
1 cup grated cheddar cheese
3 large pastured eggs lightly beaten
you will also need:
1 tsp salt
2 cups water
1/4 - 1/2 tsp cayenne pepper
freshly grated nutmeg
Let's get cooking .... Preheat oven to 350 degrees. Butter up a 13 x 9 x 2 baking dish

New Year's Eve before you go out:
Empty one lb bag of dry beans into a bowl. Wash and sort out any debris. Cover with water and soak in refrigerator overnight.

2 (15 oz) cans Black Eye Peas, rinsed and drained
1 (11 oz) Green Giant suprisingly sweet yellow and white corn drained or you
could use Miller Farms Sweet Corn from your freezer
Set peas and corn aside to drain
Meanwhile chop these veggies:
1/2 red bell pepper
1/2 orange bell pepper
1/2 medium red onion
1 stalk celery
1 clove garlic, minced
combine drained canned veggies with the fresh chopped veggies

5 green onions, chopped and divided
1 cup sour cream
1/2 cup good mayonaise
1/4 cup freshly grated Parmesan Cheese
