New Year's Day ... Good Luck Soup

New Year's Eve ... before you go out: Empty a one pound bag of dried black-eyed pes into a bowl. Wash and sort out debris. Cover with water and soak in refrigerator overnight. New Year's Day ... drain the soaking water off the peas and place peas in a large kettle. Add 2 qts water, ham chunks or hamhock and one large onion (chopped). Bring to a boil, reduce to simmer and simmer along a couple of hours (adding more water as necessary) until peas are tender. Then add ... 1 (15 oz) can tomatoes, 1 large bell pepper (chopped), 1 garlic clove (minced), 1/4 cup lemon juice (freshly squeezed), salt and pepper to your taste and a pinch of ginger. Simmer another 15 - 30 minutes until all seasonings and vegetables have mingled nicely. Good Luck with your Soup and Good Luck in the New Year!!
